Fall and winter squash are staples at holiday tables. This squash recipe will fool everyone-- they won't believe it's healthy!
Two butternut squashes
3 tsp. butter
1/4 cup sugar free imitation maple syrup
1/2 tsp rum extract
1/2 tsp freshly ground nutmeg
Preheat the oven to 400 degrees.
Cut the squash in half, lengthwise. Scoop out the seeds with a spoon. You can discard them, or bake separately like pumpkin seeds.
Lay the squash, cut-side up, on a baking sheet covered with foil or parchment paper.
Melt 1 tsp. of butter and brush the cut parts of the squash with it. Sprinkle with salt. Put it in the oven for 20 minutes.
Melt the syrup, remaining butter and rum extract in a pan. Mix will and allow it to reduce slightly.
Pull the squash out of the oven and brush the syrup mixture onto the halves liberally. Grate nutmeg over the top.
Put it back in the oven for 5 to 10 minutes to finish off. The squash should be a rich brownish color on top.
